Spring Pea Toasts With Radish and Lavender

These spring pea toasts with radish and lavender are the perfect accompaniment to your afternoon tea. A hefty portion of peas acts as a nourishing and filling spread, the radishes and lavender add a nice finishing touch, and the toast is the kind of crunchy and comforting bread you need in the afternoon. Enjoy this snack with a calming cup of tea, or paired with cauliflower soup.


INGREDIENTS

  • 1 cup peas, fresh or frozen
  • 1/2 lemon, juiced
  • 1 tablespoon tahini
  • A dash of salt and pepper to taste
  • 3 radishes, French or regular
  • Culinary lavender
  • 2-3 slices bread, gluten-free or otherwise, toasted

PREPARATION

  1. Step 1 : If using frozen peas, heat them in the microwave for 1 minute. Add peas to a food processor or blender.
  2. Step 2 : Add in lemon juice, tahini, salt, and pepper, and blend until well combined.
  3. Step 3 : Toast your favorite bread.
  4. Step 4 : With a fork, coat your toasts evenly pressing down.
  5. Step 5: Separately, thinly slice your radishes. Add slices over the pea mixture.
  6. Step 6 : Finally, top with some lavender by hand, sprinkling over top, and serve.
