15 Minute Dairy Free Pumpkin Parfait [VEGAN]

This is a perfect treat for someone looking for their pumpkin fix. The recipe is extremely easy to make – there are only seven ingredients – and can be enjoyed for breakfast and dessert. It's "parfai-ction"!


SERVES : 2 


INGREDIENTS

  • 1/2 can of pumpkin purée
  • 1/4 cup cashews
  • 2 tablespoon chia seeds
  • 1/4 cup almond milk
  • A dash of vanilla extract
  • 1/4 cup coconut cream
  • 2 heaping tablespoons pumpkin butter
  • 2 cups vegan coconut yogurt
  • Coconut flakes, to sprinkle
  • Pumpkin seeds, to sprinkle

PREPARATION

  1. Soak your cashews for about an hour.
  2. In a blender, blend the cashews, almond milk, and coconut cream until everything is well mixed.
  3. Add the chia seeds, pumpkin puree,pumpkin butter and vanilla extract to the blender and blend it all together.
  4. In two small glasses, create your first layer with the pumpkin purée.
  5. Add a big dollop of your vegan yogurt.
  6. Add another big dollop of pumpkin purée.
  7. Top with coconut flakes and pumpkin seeds and serve.
